The approach we have is to really do as little as possible in the winery. We would much rather put the majority of our energy into the vineyards. Someone once said, “The hardest thing in winemaking is to do nothing,” but the point for all winemakers is to eventually get to a place where they don’t have to do very much. We deal with the highest quality of fruit as possible, and that requires less manipulation or assistance.
We don’t believe in using a lot of oak. It’s more about the expression of the fruit, which should be a reflection of where the fruit comes from. Our philosophy is really minimalistic; however, there is a lot of effort that goes into wine production. Our intention is to let the fruit express its origin, its terroir. Our wines are vineyard-specific. These are vineyards that we have worked with and managed for many years, even decades.
